The dried figs recipe is the fruit of a berry and deciduous tree with claw leaves that are not resistant to freezing and are planted in temperate and semi-warm climates. The lifespan of the fig tree is mentioned up to three hundred years and if there are suitable conditions, its height can reach six meters or even more. The fruit of this tree, with its high nutritional and medical value, is high in sugar and is a good source of potassium, magnesium, calcium, and phosphorus, and is rich in vitamins A, B, and C, as well as a rich source of dietary fiber.

The fig tree has broad, clawed leaves with a rough, rough appearance and is divided into 3 to 5 deep divisions. The part that is known as the fig fruit and is nourished is not actually a fruit but a pear appendage in which fig flowers are placed in large numbers and sugars accumulate in this appendage.

In terms of division, the fig tree includes two categories, non-edible and edible. The non-edible type is actually a male tree known as “bar” and has winter, spring, and summer, and its spring type is used for pollination or the so-called “slave” of edible figs.

The edible type of fig may have one or two stages of crop production during the year. If it produces only one stage of production, it bears fruit in summer, and if it has two stages of production, the first stage arrives in spring or early summer and the second stage, which is the main product of the tree, arrives in late summer.

Depending on the fruit production per year and the need or non-need for pollination to keep the fruit on the tree, the edible type of fig is divided into three common categories, Izmir and San Pedro. The common type is the same black figs on the market that do not need pollination. Izmir fig is the most important economic type and is divided into different cultivars such as black, green, king fig, and kashki. The main figs produced in Iran are Izmir green species. The San Pedro type also has two stages of product production, the first of which is more important and, unlike the second stage, does not require pollination.
